I made Yoopers all grain DFH 60 minute clone using Pacman Yeast. This is my first time using Pacman yeast and have a question about fermentation temperatures.
I had the carboy in the garage at 56-60F ambient temperature for the first week. It is starting to slow down, and i'm nervous that this is because of cold temperatures (night time lows in the garage are about 55-56F).
Should I leave the carboy in the garage for the rest of the primary fermentation? Or, should I move it to the basement for the remainder (66-70F ambient temperature). ?
I am just worried about fusel alcohols developing due to temperatures that high. Is this a valid concern at this stage of the process?
