I keep hearing people say they use a bucket but i've been plugging one side of the sink and filling it up with oxyclean and water to get the labels off bottles/clean whatever.

Is there any reason i shouldn't do this? Could it be bad for the sink or something?

I think it's perfectly fine in the sink. People use a bucket or a trash can to soak bottle because they are usually deeper than a sink. I know I have a real shallow sink that only holds 12 bottles to soak.

The sink use is fine and actually it will give your sink a good cleaning! +1 on a good rinse or you will have residue.
