I overshot my mash temp by three degrees. It was meant to be 156, but got to 159. What effects will this have on my beer?

That's not really a huge difference given the thermometer may also be +\-1-2 degrees

You may wind up with a slightly higher FG due to a less fermentables wort but the beer will still be great!

^What they said. You'll create more complex and unfermentable sugars at that temperature so your FG will be higher than anticipated and you will have a bit more body to you beer. Next time toss in a handful of ice cubes and stir your mash up for a few minutes. That should take care of it.
