So I have been force carbing using “set it and forget” around 10–11 psi at 39F for about a week now. I poured one tonight and it seems to be just about carbed where I want it so my question is.... is it safe to leave on 10 psi for the remainder of its serving (will probably drink it all in the next week or so) or should I remove the CO2 now or soon before serving again to not over carb it? At that low of PSI how long can it be hooked up to CO2 without taste / overcarbing changes? Thanks!
 
As Yooper said, leave it where it's at. It will not continue to carb at 10 psi. It will hit a certain volume of CO2 absorbed in the beer and it will level out. In order to over carbonate it, you'd have to keep increasing the psi.
