Still trying to work out the details for this Ommegang Witte clone.
This is my first partial mash, so any suggestions for improvement would be appreciated. Thanks guys and gals.

Ommegawd Wit (Partial Mash)

Batch size: 5 gallons
Target OG: 1.048
Target FG: 1.012
12.6 IBU
3.59 SRM
Boil time: 60 minutes

Ingredients
2 lbs. 6 oz. Briess Pilsen Extra Light DME
2 lbs. 6 oz. Briess White Wheat
2 lbs. Belgian Pilsner Malt
1 lb. 1 oz. Briess Flaked Wheat

1 oz. Spalt German Hop Pellets 3.9% AA (@60 mins)
1 oz. Sweet Orange Peel (@ 10 mins)
.5 oz. Coriander (@ 10 mins)

Yeast
1 SMACKPAK! Wyeast Labs Belgian Witbier

Mash grains at 155ºF for 60 minutes
OR
Mash 5 min. at 113F
35 min. at 144F
20 min. at 154F
Mash off at 165F

Boil 60 min. adding Spalt and DME @ start of boil.
Add coriander and orange peel @10 min.
Pitch yeat at 70ºF ferment to completion, carbonate to 2.7 volumes.

Not really sure if I should step mash or not. Thoughts?
Also since this is my first PM I estimated my efficiency @ 70%...is that a good guess or bad? Cheers!

Ha, nice bump! I thought this thread had been lost in the nether-regions of the interwebz.

Honestly, it was quite good! Especially being my first partial mash and also first step mash.

One ingredient that's missing above is I used 8 oz. of flaked oats. I used 1 full oz. of coriander too. At first I thought this was a big mistake, but as the beer aged just a little bit the spice mellowed out nicely.

Tasting it side by side with Ommegang Wit, it was very close to a perfect clone. Mine was a wee bit spicier (coriander), and the original had a slightly rounder mouthfeel. Next time I try this one I might bring the oats up to try to compensate for that.
