Sooooo, I found 3 old cans of crappy extract... Cooper's Mexican lager, Cooper's Wheat, and John Bull Brown. Dates are 2009. Gonna make an Imperial Stout partial mash and see what happens!
 
Mash Ingredients

8.0 oz - Caramel/Crystal Malt -120L
2 lb - Oats, Flaked
8.0 oz - Chocolate Malt
4.0 oz - Special B Malt
12.0 oz - Chocolate Malt
8.0 oz - Roasted Barley
6 lb - Pale Malt (2 Row) US
1 lb - Brown sugar

2.00 oz - Warrior - First Wort Addition (81.3 IBUs)

3 lb 12.0 oz - Wheat Liquid Extract - Late extract addition: 15 min (16.3%) - 8.0 SRM
3 lb 12.0 oz - Pale Liquid Extract - Late extract addition: 15 min (16.3%) - 8.0 SRM
4 lb - Dark Liquid Extract - Late extract addition: 15 min (17.4%) - 17.5 SRM

2.00 oz - Centennial - Steep 30 min (13.9 IBUs)

I seriously thought about using all 3 packets of the dry yeast that came with the kits...
But decided on US-05 instead
 
I just tapped this and it's...not horrible! It's not a great beer, but I expected it to be a whole lot worse. I think this could actually be good a year from now!
 
I bottled some of this from the keg and took it to a club event. Got several people to taste it (a couple BJCP judges [emoji16]) without telling them the story and people thought it was delicious! I expected this to go into the off flavor tasting and it's actually starting to come together and taste pretty freaking good!
