After racking into the bottling bucket and adding the priming surgar I was interupted with a famiily emergency. I threw a lid and airlock on the brew.

Is it still ok to bottle on the next day? Or do I need to let this ferment-out and then add new priming sugar & bottle next week?

Thanks!

If you bottle it now, it will end up under-carbed.

It's probably best to wait it out and then re-prime. You have no way of figuring out how much more sugar to add right not to get the CO2 where you want it.

Thanks, since the airlock was bubbling this morning I assumed that was lost carbonation leaving. I'll let the yeast finish this prime and then re-prime next weekend.

Let this be a lesson to me... have MORE KEGS on hand LOL
