As in it wasn't done.....Don't really know what happened. Have 12 carboys going and wasn't really checking the fermentation on our amber ale until last night when I went to bottle it, it's been five weeks. Checked the gravity, same as og. Went to the fridge sure as guns there is an extra package of yeast.......

So long story short I've had 5 gallons of wort aging for a month......No visible infections at this point. Is it best to boil again and pitch or would it be safe to just pitch now? Smell seems fine, haven't tasted it......

Thanks for any advice for this ingenius situation!

12 Carboys??!! Dude, that's a serious pipeline!!

If there's no sign of a problem, I'd go ahead and pitch. But what do I know, I only brew one batch at a time.

I'd boil, cool, and pitch....there is likely something growing in there after this long, even if it is showing visible signs of infection.
