Odd looking head on Witbier

We held a BBQ this past weekend celebrating the readiness of two batches, and everything was fantastic.

However one guest poured a homebrew (Belgian Witbier) into her glass and the head looked a little funky. It was thicker and darker, almost fungusy looking. It tasted fine but appearance made me think it might have been contiminated.

Is this a sanitation issue? Has anyone seen anything like this before?
 
If this is out of a bottle I'd have to agree with the current assessment. I've done it several times. The head on a Witbier can be thick and strong and pouring some of the dregs of the bottle (not out of character for a witbier) on top of it can make an interesting-looking pattern.
 
The batch is just about gone, and there was only one beer that had the funkyness pour out. If I had to bet I'd put it all on the yeast theory.
