I realize my previous post is on the wrong forum. Shucks. It was my 1st post here. Here's my 2nd:
I've been No-Chilling my brews with excellent results. I ferment in plastic. Im very very clean & careful. Wash & repitch my yeast (my house strain: WLP001+WLP007). Temp control.
I do a sort of Pre-Dry Hop, in that, as I rack my hot wort into the fermenter bucket, it's pouring over a small amount of hops in a bag sitting in the bottom.
I believe this compensates for whatever aromas are getting blown out during the cooling phase, which takes about 3-5 hrs in a large water bath, ice, salt,etc., & ending up with pretty dern tasty beers.
Anyone else do anything like this?
