I would have the 60 min addition as Sorachi!
A year or so ago I did a wheat sorachi SMASH and it was AMAZING! Came in at 4% and 40IBUs:mug:
 
Sounds interesting. Let us know how it turns out!

What mash temp are you thinking? You might want to go higher than usual to leave enough malt character in such a light beer.

Interesting good or weird? I'd like it to be flavorful and yet universally enjoyed. Is the sorrachi too much of a risk? What if i used some noble hops? I've never tried them...
 
Interesting good. I think you should go for it. I've done a couple milds in the 3 percent range but no blondes that low so I'm curious. I think the lemony hops will work nicely. Definitely report back.
