Need help with recipe and Falconer's Flight

I have a kit left over from the AHS 20 Anniversary, it's the Irish Red.
However I do have 1oz of Falconer's Flight that I wanted to try.

So what I have for this is

7lbs of extra pale ale
Crystal 40L 8oz
Crystal 120L 4 oz
Debittered Black 2 oz


1oz of Falconer's Flight 10.5%
1oz Hallertau 6.9%
1oz of Northdown 5.7%

Irish Ale Yeast WLP004

and a couple of packs Safale-05


I thought about using just the FF and not include the Hallertau or Northdown and use the Irish Red Yeast, but wasn't sure how it would turn out.

Need some suggestions.
 
I wouldn't waste something like Falconer's Flight on an Irish red, which is a beer known for having pretty much no hop flavor or aroma. I would use the other hops you have for bittering, use the FF as a late addition flavor/aroma hop, and call your beer an American amber instead. Just a thought...
 
Would you still use the Irish Red yeast?

I thought about not using the Halletau or Northdown and calling it an American Amber.
 
Yeah, it's still a clean, relatively attenuative yeast that could still be well-suited for an American amber.
 
I keep a couple of packs of S-05 in the fridge to have just in case things don't always work out. I'll try it without the other 2 hops and make a nice Amber Ale for the fall.
