Good morning all. Looking to brew a nice big RIS in the coming weeks. Does anyone have a recipe they'd like to share? I'm a huge fan of The Darkness by Surly or the always good Stone Brewing RIS.Thanks in advance.
 
1.100 OG, 90 IBU, 40 SRM

82% Pale ale malt
7% Roasted barley
4% Flaked oats
4% Chocolate malt
2% Special B
1% Debittered black malt

Mash for 90 min @ 154 F

28 AAU Cluster, Northern Brewer or Magnum @ 90 min
14 AAU Cluster, Northern Brewer or Magnum @ 30 min

Massive starter of dry English ale yeast or 4 satchets of S-04

Ferment @ 62F for 3 days, 66F for 7 days, 70F for 2-3 weeks (or until finished).
 
This is sorta based on Bells expedition stout; I like it quite a bit:

80.9% 2-row
6.7% roasted barley
4.5% crystal 80L
4.5% flaked barley
2.2% chocolate malt
1.1% black patent

55 IBU northern brewer 60min
25 IBU northern brewer 20min
5 IBU northern brewer 5min

WL007 dry English ale

Using your efficiency, target an OG in the high 1.090's.
 
The Kate the Great clone is excellent. I'm making it for the third time soon.

I made a version of that and entered it into a local comp. the biggest complaint was that it wasn’t roasty enough — which I can totally agree with. It was a delicious stout and ended up getting 2nd in its category, but it didn’t have the assertively roasty character you expect from an imp.

I think I read a review from The Mad Fermentationist that echoed the same assessment. Double the roast malt and it’s gonna be much better.
