Greetings,

I have three pint jars I saved from a batch in late August. How much should I use and what size starter?

That's a very nice looking layer of yeast sediment! I usually only get about 1/3 to 1/2 that volume, but I make 1.5L starters so I can save a little for future batches.

Shoot, I would be tempted to let that jar warm up during brew day and pitch it in, it looks huge! Of course it wouldn't hurt to make a 1L starter and let it go for a couple days before you pitch it in ( ;
 
Nice Harvest! I usually take a cup of dme and add to a quart of water. Quick boil and cool in a gallon jug.

Add whatever is in the jar to that and leave on the counter fora few days.

Every time I walk by I give it a swirl.

I usually just cover w some aluminum foil. Unless the pesky fruit flies are around.
