You can change if you don't have it. Need an acid added but don't have and don't want to drive across town for one ingredient use a lemon, guesstimate one whole lemon = about a teaspoon of acid. No clearer, try a couple chunks of frozen papaya. Want a wine with more body in this batch? Try an overripe banana about a 1/2 banana per gallon works. No tannic acid, use raisins. About a handful per gallon of wine.
Want to add a citrus background? Grating a lemon peel or orange work.
Want to add a little flavor to your grape wine, use dried fruits. Figs, cranberries,or mango add a another layer of flavor to the wine. Again a handful per gallon works for me. Boil the dried fruit and rinse if sulfated.
Of course use all sanitary protocols when using substitutes.
