Hey guys, looking to start 3 gal BIAB. Would there be any consequence to leaving the mash uncovered w/ thermometer attached to kettle while controlling temp by increasing/decreasing heat w/ continuous monitoring?

I think you will find it very hard to maintain the proper temperature. The mash is thick enough so you don't get good convection to keep the temperature even so you would have to be stirring constantly to avoid hot and cold spots. I think you would be better served to drape a couple towels over the pot to act as a lid and insulator.
