I am moving from extract to all grain brewing and I am looking at purchasing a stainless steel mash tun stock pot. Is there any different between a mash tun stock pot and a regular stock pot other than the false bottom? Couldn't you just use your normal brew pot if it has a ball valve and drop in the false bottom on brew days? Please excuse my ignorance, but I've never actually gotten to see anyone use a stock pot mash tun..... If anyone could elaborate for me I would really appreciate it.

a pot is a pot is a pot. you can use whatever you want.
 
You could use the boil-kettle as a MT I guess.
But you'll have to get some buckets to hold the wort, and finding a false bottom that fits your pot might be difficult. Plus, how will you heat your sparge water?

A cooler MT is probably a better option.

If you want to heat your MT, a keggle works great as a mash tun, and there are false-bottoms out there that fit them well.
