I'm brewing a Bavarian Hefe tonight, and through the forums I've read that it's good to not add all the extract at once, but later in the boil. This is an all LME, with steeping grains.
So how much and when is good?
1. Should I put about a quarter of the LME in first, then add all of it at the last 15? And I assume i remove from heat every time I add LME?
2. The recipe calls for 3/4 spalts at the begining for bittering, then 1/4 the last 5. Will the late addition affect the hop utl.?
