My family does a secret santa each year and we were slow this year. We haf the party yesterday and as my gift, my uncle, who runs a label shop http://www.ksidrane.com, said he would make me labels for my brewery/beers. He said he could do anything, clear labels, peel off, whatever you can imagine. So with this knowledge, what would you specify in the labels you want?

I would start with the artwork and go from there. Not really sure what the question is, but your uncle would probably be your best source of information. You'll want something that will stay on cold and wet, and not run, smear or smudge when wet. Make sure you match the size and shape with the bottle you're using (that it fits on the flat area of the bottle). I'm sure you'll have fun creating these and showing them off when finished.
