I went toy lhbs to pick up some wheat for a kolsch I am brewing tomorrow and they had pale wheat what I had never used before. I got 2.5 pounds of that as well as white wheat and was wondering if anyone has done a kolsch with the pale wheat. What would you use if you had the choice?

I assume the white wheat was malted as well? Either one should be fine since wheat is generally a pretty small portion of the grist of a kolsch.

White wheat is a group of cultivars. The "pale" description refers to the level of kilning. Weyermann Pale Wheat is probably the most authentic commonly available malt for a Koelsch.
