I am currently fermenting a fruitcake old ale and I was wanting to age it after secondary in an extra keg. What I was planning on doing was connecting my co2 tank up to clear out the o2 in the headspace. How long would I need to connect this up to do that? Additionally, would anyone suggest fully carbonating it before disconnecting it? I was going to age it at room temp, for reference.

Use the CO2 to flush "air" out of the keg head space, and with the keg sealed tight you can remove the gas connection and park the keg for as long as you wish. Or you can carbonate the keg first, then park it. Doesn't really matter...

Cheers!
