Haven't made Mead in over 20 years. With the excellent research and help from some old newbie questions, I just bottled my latest batch of traditional mead. Made Memorial Day, racked to secondary on Fathers Day, bottled Labor Day. OG was 1.120 and FG was 1.002. Used 15 lbs of great local honey obtainded directly from the apiary. Backsweetened after fermentation stopped and it did not start back up again. Hydrometer sample had a very nice honey aroma and sample was of course hot with alcohol, but you could make out the honey flavor. Should be excellent and I bottled in cobolt blue 750ml and 375ml bottles with wax dipped tops to give away for Christmas presents to excellent friends and family.
