Hi.. I have a few pounds of Cocoa Nibs and wanted to know if anyone has some advice on how to get chocolate flavor into a mead.
How long should I age the mead on the nibs?
Other methods?

A few years ago (2009 maybe?) there was a thread here where a guy did an experiment on which way was best for infusing chocolate flavor into mead. He tried nibs, hershey bar, nesquick, etc...
Can't remember the guys name, but it was a multi-page thread & his experiment was well documented. Might take a bit of searching, but it's probably still here somewhere. I think it would have the answers you're looking for.

I have had good luck with using chocolate syrup in the secondary. It didn't take long to age out, and it cleared up nicely. I don't have my notes handy but l can try post how much I used later.
