I have brewed 11 gallons of an Amber Ale, racked from carboys to cornys this noon (Wednesday) and put it in the freezer for a cold crash. I plan to filter with a plate filter to other kegs tomorrow (Thursday) afternoon and then force carbonate. That being said, this is my first attempt to keg and carbonate my homebrew. I need to have this beer ready for a wedding party (my 76 year old Mother) Saturday evening. How would you recommend I do the force carbonating. Or any other advice would be great. I really would appriciate you guidance.

Since it will be chilled and filtered, your best bet is to set the CO2 at serving pressure and shake the keg until the regulator stops chattering. 15 minutes will probably be enough.
