One of my favorite beers is an imperial cream stout. Irish death, by iron horse. I have a clone recipe on here somewhere, but its all grain

I say give it a shot and see what you think. Its a great fall beer

Unfortunately, I had the same problem I had with my last batch which was overestimating my boil off. My OG only ended up being 1.099, but I also ended up with 4 gallons of wort. It's ok though! I think this is still going to be a mighty fine winter warmer (assuming it's ready to drink before winter is up)!
 
You could always boil longer for a higher OG and lower volume wort but you'd have to adjust your hop additions as longer boil = more bitterness from Alpha Acids.

I think my problem is that my stove doesn't boil the contents of my 10.5 gal kettle very well. The contents never come to a strong, rolling boil, but more of a gentle boil. I was planning on brewing in my smaller kettle last night, but I didn't realize it was only a 4 gal kettle...I always thought it was 5! Still came out good though. It'll be tough to be patient!
 
After 4 days in the fermenter, my curiosity got the better of me. I took a sample (dun, dun, dunnnnnnnn!). Please spare me the lecture. :) Anywho, it's dropped from 1.099 to 1.058, has some astringency due to my damned water (stupid me thought the PUR filter took care of that...I should learn how to read), tastes GREAT, finishing like a very strong cup of coffee...with cream. I star-sanned the crap out of the bottom of the lid and snapped her back on. Fermentation will probably be done in another 4 or 5 days, but I think I'm going to let the beer sit on the yeast for a while. 2-3 months maybe? Have a nice Christmas beer perhaps! Anywho, there's your update...if you care. :ban:
