How would adjust this recipe?

Looks like a winner but I'm off on the crystal and open to suggestions.
Grain bill will be doubled for 10 gallon batch
Was looking for a Founders all day and found this
Same hops I have on hand so it works out

7.5 lbs Pale 2-row 78.9%
2 lbs crystal/caramel 20 21.1%
.75 oz cascade FWH 60 min 15.7 IBU
2 oz Amarillo gold 5 mins 11.7 IBU
2 oz centennial hop stand 15 mins 17.1 IBU
.25 oz cascade hop stand 15 mins 1.2 IBU

On hand:
Lots of marris otter
1 lb caramel 60
1.5 LB Munich 10
1/2 lb amber malt
3/4 lb special roast
1 LB Carapils
1 lb flaked wheat
 
This is all just me, and if you are looking for a clone it may or not be what you want, but I usually try to stick to under 20% on the specialty malts like the crystals- though you are barely over that. If it were mine, I would probably sub that Munich that you have on hand for a little of that caramel and a little of the 2-row. I like the toasty bit from a little Munich. And maybe throw in a half of pound of the Carapils. People get up in arms arguing over that stuff, but I like it- and some of my favorite craft brews use it.
 
guessing at an light IPA I would go with

7.5lbs 2-row
1 lbs flaked wheat
1 lbs carapils
.25lbs special roast
.25oz Centennial 60
.5oz amarillo 60
.5oz cascade 30
1oz amarillo
.5oz Cascade hop stand
1oz Centennial Dry hop

Yeast is a different story, you have to go with a yeast you like. I like 515, 051, 023, 1007, 1450, 1275, 3463/3638/380/351 (drop the flaked wheat and it would be a good dampfbier and lower ibu to 20ish)
 
Just about to mash in:
I went
14 lb 2 row
1 lb munich
1 lb caramel 60
.5 lb carapils
I'm no recipe builder so we'll see in a couple weeks
