I have no idea how much honey malt to add. What's a good "middle of the road"? I don't want it to be cloying or over sweet, but I want to notice it. I was thinking 0.25 lb... ? Thanks a ton for any help.

I would be a little more cautious than Edtide.
4oz. for a nice touch, and no more than 8oz. or IMO it'll be too cloying.
I have used 1 lb. in a Graf, but that was steeped to counteract the expected dryness and tartness of the completed cider.
