I'm about to start 3 one gallon batches of mead and I want to try some different fruit flavors. However, I have no clue as to how much fruit I should use for one gallon. I know that it's all preference based but if I could get a base amount to work off I would greatly appreciate it.

Usually a pound or two works for 1 gallon batches, consider making 3 batches of traditional mead then adding your fruit into the secondary, better flavor and aroma retention that way

yes, 3-4 lbs per gal from my experience is a good start. Except may be raspberries. I used 5 lbs in primary (with intention to use 5 lbs more in secondary) on 3 gal batch and color, flavor and aroma was so intense at the end of fermentation, I decided against any in secondary.
