Thanks for the info! Also I ferment for 7 days my o.g is right on, and I dont secondary ferment, straight to the bottle. Is that right? got any other tips or exract recipes of any hefe's? For a newby of course! Thanks!

Leave it in the primary for 2-3 weeks especially if you dont use a secondary. Gives the yeasties time to clean up after their party.

OK...let's see....

1. It should be done fermenting when you are done with primary. Secondary is for clearing (less haze and sediment). Optional....

2. tips?...I like to "late extract addition" all my extracts. This makes the beer lighter in color and less carmelization of the extract. Just add 3/4 of the extract in the last 10 minutes of the 60 min boil. Also, IMO, dry extract turns out better than syrup, but again, YMMV

3. The absolute best extract recipe for a hefe is very tough....

6 lbs. wheat dry extract
1 oz hallertauer for 60
White Labs WLP300
ferment 10 days, don't secondary = cloudy = good

um....that's it :D
