Sorry if this question has been asked many times before I have just been searching for quite awhile without finding a clear answer. I do not want to sur lie age my wine I just want to give the wine enough time to clear more before my first racking. I am also using bentonite for a clearing agent. I was wondering if leaving it on all the fine lees for a month or maybe two at the most would change the flavor or odor in any way?

Some yeast strains are better than others for not producing off flavors when lying on the lees, but most should be fine for up to 60 days without producing off flavors.
