I recently acquired two of the brooklyn brew shop summer wheat 1 gallon kit to make a 2 gallon batch but I wanted to make a hoppy summer wheat and wanted to get your feedback on what to do. The kit comes with some styrian golding hops. My idea was to use this hops as indicated half at the 60 minutes at the end but add some amarillo or australian galaxy at 10 minutes, boiloff and dry hopping on second fermentation. Do you have any recommendations for this. Thank you
 
I've used Australian Galaxy and Summer hops together in a hoppy wheat. For your 2 gallon batch, I'd use an ounce at flame out and let it sit hot for 10-20 minutes prior chilling. Then another ounce in dry hop. I always prefer a blend over a single hop, even a distinct, overwhelming one like Citra. So go with a 50/50 blend of Amarillo and Galaxy with 1/2 ounce each at flameout and dryhop.

I wouldn't bother with a 10 minute addition.

Mine is about a week from kegging (5 gal)... recipe:

6 lb White Wheat
5 lb 2-row
1 lb Caramel/crystal 40L

5 gal batch
Pre-boil OG = 1.058
OG = 1.060
FG = 1.009
IBU = 50ish

.5 oz Columbus @ 60 mins - 15% AA = 26 ibu
1 oz Centennial @ 30 mins - 9% AA = 24 ibu
.5 oz Columbus flame-out addition
.5 oz Centennial flame-out addition
.5 oz Cascade flame-out addition
1 packet rehydrated Nottingham pitch @ 62°
1 oz Citra dry hop - 5 days
1 oz Mosaic dry hop - 5 days
.5 oz Simcoe dry hop - 5 days


First sample tasted today, tastes exactly like a regular old wheat but only slightly more hoppy (as it probably should)... just started dry hop today. I'm pretty excited to see how it turns out.
