This summer I'm going to live in an apartment with no air conditioning and open windows. I am going to keep my fermentors in closets with some insulation. However, even in Wisconsin there will be a few days where its 80-90 degrees.
Does anyone have any neat tricks keep the fermenter cool, or reduce the fruity esters from developing from over active yeast?
Will my batch be ruined if it sits at 90 for a few days?? Should I even bother trying?
Any suggestions would be greatly appreciated.
