I'm making a pumpkin ale tomorrow and the recipe calls for 5 allspice berries but when i went to the store all they had were ground. How much of it should I use and is it ok for it to go the carboy? how much do you guys use?
 
I would use a very small amount, like maybe 1/4 tsp. Ground spices can turn out pretty pungent in beer and it's very easy to overdo it. My pumpkin ale came out as a cinnamon bomb and took a couple of months in cold storage before it was good. You can always make a spice tea to up the flavor later if you need to.
 
I would do the spice tea. Then you can adjust the spice profile to get it excatly where you want. Add a little, taste, add a little, taste, ect.
