I'd like to get some notable banana in my next Hefe, and while noting WY says the range can go up to 75F, I am very skeptical of going that high. What temp will do this w/o going overboard? Will 70F be too high?
 
This is one of my favorite yeasts. I've fermented with temps up to 66 and had good results.

I ran a batch at 68F and was totally happy with the resulting balance. When they say 75F as an upper limit, to be sure the yeast can perform at that level, but I'd question the production of sulfur esters this yeast is known to throw.
