Head space in carboy

I plan to try Graff for the first time and I'm going to do a 5 gallon batch.... But all my carboys are 6.5 gallons.... That's going to leave me with quite a bit of headspace.
The guy at the brew store once told me too much headspace is not good... What should I do, just do it with a gallon and a half of head space or try to calculate the 5 gallon recipe into 6.5?
 
A gallon and a half of head space is not "a lot."
A lot of head space would be fermenting a 1 gal batch in a 5 gallon carboy.

I have tried to ferment 5 gallons in a 5 gallon container with messy and disasterous results (no photos-was too busy apologizing to the wife)

6.5 is perfect for a 5 gallon batch.
