Grain question

For various reasons I have not brewed for a long time. I want to brew again here in the near future and want some opinions. I have some grain left that has been kept in a vittles vault. I opened it the other day at it looks fine... no moisture, no mold, no bugs, smells and tastes fine. It's been in there for about 2 years. I dumped any adjunct grains and crystals but the rest seems to be ok. Actually some of it is even sealed in vacuum sealed food saver bags.

So the question is.... can I still use it and will it be ok? I see people say it can last at least a year. Does it loose it's ferment-ability in any way? I wouldn't think so but I'm not sure. Seems a waste to just throw it out but I don't want to go through a whole brew day if it's not going to be any good.
 
I doubt anyone has actually tried using 2 year old grains. I don't see it being an issue as long as they were sealed good and kept cool and dry.
