Gelatin and carbonation

I have 10 gallons sitting in my unitank. My plan is to cold crash to 32 degrees and add gelatin. My question is can I also start carbing (set and forget) at the same time or wait two days for the gelatin to work and then start to carb?

You can certainly start carbonating immediately after adding gelatin with no ill effects. Give the gelatin 5-7 days for maximum clarity, though. By the time your beer is charged with the set & forget method the gelatin should have worked its magic.
