I usually keep about 2" of water above the grain bed. My understanding is that this is the minimum.
There are a few threads about adjusting the level according to the height of the grain bed.
I am considering installing a fixed float switch which will maintain the same level regardless of the how much grain is used.
Does it matter if the level is higher than 2" ? Is there a limit ?
 
I think it's just important to have fluidity and free flow. you're really just trying to prevent the compacting of the grainbed. the 2" guideline is probably to make sure that you can balance the flow rates out with the flow in. I have a rubbermaid cooler as my mash tun and If I even touch the valve, I'll get chunks through into the boil. It's best if I can keep the water level high enough above the grain bed that I don't need to touch the drain rate.
