I recently brewed up a Zombie Dust Pale Ale Clone from Northern Brewer.
MASH INGREDIENTS
- 10.5 lbs Rahr 2-row
- 1.5 lbs Munich malt
- 0.5 lbs Carapils
- 0.5 lbs Medium Crystal
BOIL ADDITIONS & TIMES
- 0.5 oz Citra (First wort)
- 1 oz Citra (20 min)
- 1 oz Citra (10 min)
- 1 oz Citra (5 min)
- 1.5 oz Citra (Flameout)
- 3 oz Citra (Dry hops)
YEAST
Dry yeast Fermentis Safale S-04.
MASH SCHEDULE: SINGLE INFUSION
Sacch Rest: 152° F for 60 minutes
Mashout: 170° F for 10 minutes
2 weeks in the primary, then two weeks in the secondary then I kegged, cold crashed and forced carbonated the beer. The beer has excellent flavor, nice clarity and comes out of the keg with a nice head.
It has been in the keg now for about 2-3 weeks at about 10-11psi.
The mouthfeel of the beer is flat with in minutes in the glass.
Any thoughts on what I could have done wrong or do differently to improve the carbonation?
