I'm planning my second biab this weekend and was thinking a Belgian wit for the summertime. I've looked at tons of recipes and want to keep it simple and close to style. I'm thinking:

5 lbs pale 2 row
5lbs - flaked wheat
.75 lbs- honey malt
.5 lbs - carapils

1 oz either saaz or hallertau ( I have both on hand) at 60 mins

.75 oz coriander ( cracked) 5 mins
.75 oz bitter orange peel. 5 mins

I'm considering entering this into a free competition just for kicks but was wondering if the honey malt would pull me too far from style or if there are other problems with the recipe.

any feedback would be really appreciated
 
I dunno about the honey malt but that's just me. I think it sounds interesting. Equal parts pale to flaked wheat is interesting too. Do it and let us know how it comes out! I'm doing my wit tomorrow.
 
I just brewed a wit a couple weeks ago and tried a gravity sample tonight. It was intended to be a clone of a local brewery's wit, but I don't think it came out the same. That said it's still very promising, just not a clone. The recipe I used was:

5# Pils
5# White wheat malt
1# Munich

1 oz Hallertaur @ 60 min
1 oz Saaz @ 10 min

1 oz Crushed coriander @ 10
1 oz Sweet orange peel @ 10

WLP500 Trappist Ale Yeast
