OK, I've done my first 2 batches of cider. One with 'fresh' cloudy juice, and one with clear (Old Orchard) juice.
Both were started 3 weeks ago, and I racked them to secondary this evening (I need trhe fermenters for a cyser tomorrow). They checked in at 0.998 and 1.000. Both were cloudy. The 'fresh' juice had more flavor. Both tasted excellent. Not sure what I was expecting, but both tasted really good and as far as I am concerned were slightly sweet. I like dry wines and I think Brut Champagne is sweet; I was expecting something really dry, but what I got was really good. Add some carbonation and it should be really good.
I plan to bottle half of it in 3 weeks ready for Xmas and keep the rest conditioning for a few months.
