I have never used the chocolate extract personally but have heard it can be overly sweet/fake tasting??? Lots of people seem to use the cocao nibbs in secondary for the same result. But like I said, this is not from personal experience.

I have a chocolate stout that I used chocolate extract from Austin in, and it tastes wonderful! I racked on it in the bottle bucket instead of putting it in the fermentor..

Nathan.. I would recommend doing a 3-4 week primary and no secondary. That's just my opinion, though!

EDIT:, Nevermind! I see you're using fruit. I would still do a longer primary than 7 days, though.

I did 5 days for my rhubarb IPA I'll just taste it daily until I get the flavor I'm looking for
