Just poured a glass of my oatmeal stout just to check it and boy is it good. It will need more carbonation only 3 days at 10 psi

It sat 2 weeks in primary and a week in secondary. Then put it in the keg to carb up and just checked it and it taste so good. Not as heavy as Guinness but nice.

I wouldn't wait. Jack it up to 30psi and leave it there for the night. You'll be good to go tomorrow for supper. Turn your regulator back down, pop off the excess pressure, re-ajdust regulator, and get drinking.

Three weeks is plenty of time for an average gravity stout that was properly pitched and fermented to be approaching its peak.
