My first brew

Brew Efficiancy 74%
Malt - Pot. Extract - Mass (lbs) + % of sugar added by each grain
Pale 2-row malt - 37 GU/lbs - 8,66 (80%)
Crystal malt 30/37L - 34 GU/lbs - 1,18 (10%)
Cara-pils 10L (US) - 33 GU/lbs - 0,85 (7%)
Chocolate Malt - 30 GU/lbs - 0,40 (3%)
Not 5,25gal but 4,5

2-step infusion mash

Mash-in 12.5L @ 72 C (My grain was at 26 C)
Mash for 60 min (65-66 C)
Add boiling water to get 78 C (approx 7-9L), then mash out.
Sparge until you get your desired volume for boiling, 17L for me.

Boiling

60 min on the stove (two pots)
38g Magnum (aprox. 10%) 60 min *** It's 60 IBU*** But my hops was a bit old
63.9g Styrian Golding (4%) 15 min
Irish moss 15 min

Drop temperature to 20 C

Pitch yeasts (Safale S04)

Store for fermentation

Primary 7 days at 20 C
Secondary 14 days at 20 C
Prime
Bottle conditionning 2 months at 20 C

Turned out very well
Nice roasted flavor, enough bodied. Peasant to drink!
I like this yeast!
