Tell me if this sounds like it will come out well:

5 gallons pasteurized apple cider
2 lbs. Honey
3 lbs. Brown Sugar
2 tsp. Cinnamon sugar
1 tsp. Allspice
1 tsp. Nutmeg
2 tbl. pure vanilla extract.

Wyeast 4632 Dry mead yeast:

Process I am considering:

Dissolve sugars in 2 gallons of cider at 150-160. Add to the rest of the cider and all the other ingredients in a carboy and pitch yeast at 75 degrees.

One month in primary. 2-3 months in secondary.

I don't have personal experience using spices (such as allspice, etc.) but I've heard that it is better to add them in the secondary.
