Hi all
Off this weekend to start off a wine kit.
Now I have made a 6 bottle kit but now looking at doing a 30 bottle kit. When I made the 6 bottle I racked after clearing on the second week. My question is if I ferment a 30 bottle in a barrel can I just leave it in there after clearing and just tap it off as and when I want a glass or six or do I need to rack off the lees??

You need to read a bit and learn before you get that kit. First week or so, the juice goes in an open bucket. Next, rack to a 6 gallon carboy and let that sit about 2 weeks, the kit will tell you what to do at this point. After that, rack again and let the wine (yes, it is wine now) sit under airlock for a few more weeks, if you want to sit in a barrel, someone else will help as I don't have a barrel. After sitting 6 months or so, you can bottle.
