Howdy folks -- I brewed a big stout, 11% back in January and have it secondary on oak. I've been taking samples to gauge when to get it off the oak, it tastes fantastic but there is a really noticeable alcohol burn to it that I am hoping will mellow out. I've had the same experience with big stouts before except I haven't racked any on to oak, so I typically don't sample along the way, and a year of conditioning seems to always mellow that alcohol burn. Typical to have a strong burn 4-5 months into conditioning? Anything that can be done to lessen it?

As long as it's not fusels, you just have to wait. I just drank an BB RIS I made about 2 years ago. It's just hitting it's stride.

How long has the beer been on oak? I usually oak my stouts for about 3 weeks or so.
