Looking for some feedback on this recipe. It has been adjusted and modified through the years. Just wanted to see if anyone has some thoughts on it. - Slainte!

This is going to be based on the 1st runnings of a 3 part Parti-Gyle

Brew Method: All Grain
Style Name: Wee Heavy
Boil Time: 90 min
Batch Size: 5.5 gallons (fermentor volume)
Boil Size: 7.5 gallons
Boil Gravity: 1.091

STATS:
Original Gravity: 1.114
Final Gravity: 1.025
ABV: 13.2%
IBU: 28.63
SRM: 25.21

FERMENTABLES:
7.5 Gallons of Extract from Parti-gyle 1st Runnings (1.083 SG) - Maris Otter (90.8%)

STEEPING GRAINS:
13 oz - Melanoidin (3.6%)
8 oz - Special B (2.2%)
8 oz - Chocolate Rye (2.2%)
4 oz - Roasted Barley (1.1%)

HOPS:
1.75 oz - Fuggles, Type: Pellet, AA: 4.7, Use: Boil for 60 min, IBU: 28.63
0.25 oz - Fuggles, Type: Pellet, AA: 4.7, Use: Aroma for 0 min

YEAST:
Wyeast - Scottish Ale 1728

I would take heavier with hops. But it's only because I like my beers to be bitter.
Maybe target or admiral?
 
Wee Heavy is based on a single commercial beer... Fowler's Twelve Guinea Ale. A name that was nothing more than the price of a hogshead. A tenuous foundation to build an entire style on imho. As for the sweetness it came from a high FG. The examples brewed in the 1.114 OG range by Fowler's finished around 1.040. Look for a lower attenuating yeast.
