I acquired a stainless steel box from a local creamery, its 18” X 18” X 18” with a 2” lip around the top opening. Coming out of the bottom center is a 1” pipe 90° elbow and a pipe out 12”. I am going to replace a 10-gal. IGLOO with this box. Ordered from McMaster-Carr a perforated stainless steel sheet (16 gauge, 3/16” holes on 5/32” centers). My question is how far off the bottom do I place the false bottom, with the wort draining from the center. I manly do ten gallon brews, but thanking about doing some 15 gallon ones.
