So I've done quite a few kits, but fell out of it for a while, and now I have two kits from a ways back. One is the Coopers IPA can-type kit, and the other is a BIAB Brewhouse Pale Ale. I got both of them more than two years ago.

I've got fresh yeast, but I'm sure these kits are "expired". I'm not sure what exactly happens to these kits when they're past their date. Is this a "what the heck, try it and see what happens" situation, or is this more a "No, don't do it, you'll poison yourself" situation? I'd kind of like to just throw them on and see what I get, because the nearest kit is about two hours away.

Any advice? Thanks!

Get cheap dry yeast and go for it. The extracts, if liquid are probably not too good, but it will not make poison. You already paid for them so another $4 or so, each, for yeast should give you some beer!
